The experience:

Rooted in the Chinese tea table tradition of 客随主泡 (Kè suí zhǔ pào), where guests surrender the menu to the host, this session is an intimate, unhurried exploration of characterful teas. The lineup changes regularly based on micro selections, seasonal finds, and rare private stocks, ranging from vibrant high-mountain greens to deeply roasted cliff oolongs and aged teas.

Beyond just tasting, we explore the nuances of Gongfu brewing parameters, vessel selection, and water dynamics that bring out the best in each leaf.

What to expect:

  • Guided Gongfu Brewing: Watch, sip, and learn as each tea is steeped across multiple infusions to observe how flavor profiles evolve over time.
  • Storytelling and Terroir: Deep dive into origin stories, craft traditions, and processing styles behind each featured tea.
  • Your Preferred Pace: Highly interactive if you love to chat, ask questions, and geek out over tea. If you prefer quiet space with your companion, the host will simply introduce each tea, serve the steepings, and step back so you can enjoy your conversation uninterrupted.

What this isn’t:

  • It is not an à la carte menu or a high tea service. There are no scone pairings, boba, or sweet treats. The focus is purely on the leaf and liquid.
  • It is not a rigid lecture. You will not be quizzed; it is a warm, collaborative conversation at a shared table.

What is ISO 3103?

ISO 3103 is an international standard designed specifically to test tea through deliberate over-extraction. By steeping leaves heavily under strict parameters, it forces the tea to reveal both its highest virtues and its rawest flaws. While we use premium, artisan teas for our cupping, this session is not designed for sipping pretty or drinking for pure pleasure. It is a true sensory interrogation made for total tea geeks who want to uncover what is hidden beneath the surface of the leaf.

What to expect:

  • Standardised Cupping: Evaluate teas side by side using professional tasting bowls under controlled brewing parameters such as time, weight, and temperature.
  • Sensory Mapping: Learn to identify core flavour profiles, defects, body or mouthfeel, and finish using structured flavour wheels.
  • Comparative Analysis: Understand how subtle variables, such as pluck quality, oxidation, or roasting levels, drastically alter the final cup.

What this isn’t:

  • It is not a traditional tea ceremony or relaxing sip session. The goal here is critical evaluation rather than casual relaxation.
  • It is not an academic lecture. It is hands-on, highly interactive sensory practice using real industry tools.

As both experiences involve frequent handling of boiling water and delicate tea equipment in a private home, the session is best suited for adults and older teens to ensure everyone’s safety and a comfortable tasting environment. Unfortunately, we are unable to accommodate young children or pets.
